From this liquid jem, only 500 bottles have been produced. Made with red grape varieties Caiño, Espadeiro and Sousón covered by the Rias Baixas Wine Regulating Council.
Its elaboration is characterised by a very ripe grape, a late harvest ( always in October) and both the stripping and pressing is done manually. The vineyards are treated with marine fertilisers. Fermented in stainless steel tanks for bottling in August of the following year. The wine is not filtered but racked until it reaches its optimum clarity. It’s bottled in half-litre and magnum format.
